Ingredients

Oil
Carrot, shredded

Cheddar cheese, shredded
1/2 Cup

Steps

  1. Preheat oven to 350F. Chop all veggies (shred carrot) and saute until tender in oil of choice (I use coconut). Set aside to cool a bit.
  2. Whisk together eggs, salt, pepper, cream, and cheese. Stir in cooled veggies.
  3. Generously oil a round baking dish and pour in egg and veggie mixture. Bake 20-30 minutes, until set in the center. Allow the frittata to cool at least 5 minutes, and serve.
